Pasteurization- Pasteurize at 92-95 degrees for 5 min or 85 degrees for 30 minutes
Cooling- Cool to 43-45 degrees
Inoculate 1 sachet Chr Hansen cultures 50u into 250 liters milk
Incubate at 43-45 degrees for 4-6 hours.
Cool to 20 degrees in 30 minutes
Add flavor and coloring then gently stir until smooth
Fill and pack at 20 degrees
Refrigerate for 10 -12 hours. Refrigeration helps to recover viscosity lost during stirring.
Ensure refrigerated storage at 4-6 degrees to prevent post-acidification.
